Region:
In the Vaucluse Department, at the foot of the limestone Mont Ventoux. It grows in stony clayey-limestone soils.
History:
The Winery, lying near an oratory dedicated to Saint Marc, has borne this name since it was created. According to legend, Saint Marc, the patron saint of winemakers in Provence, passed through Caromb on an evangelisation journey.

Vinification:
The Sénéchal vintage comes from a rigorous selection of grape varieties and grape quality (in terms of maturation and sanitary condition). It benefits from a traditional vinification process, with a long vatting period of approximately 20 days.
Tasting:
Visual aspect: good colour intensity, an attractive colour, very dense, ruby red with purple hues. ·
Olfactory aspect: the nose is powerful and complex, black fruit jam, spices, venison. ·
- Gustatory aspect: on the palate, a supple attack, progressing in a pleasant manner, ample, structured, with plenty of fullness and flesh. Mineral and fruity aromas (jam, kirsch), the finale is tannic, very silky and warm.
Accompanying foods and wines:
The Sénéchal vintage is suited perfectly to red meat, strong dishes, such as game and, also, cheese.
Serving temperature:
This wine should be served at room temperature, between 18 and 20°C to enjoy the typical character of the Syrah grapes.
Storage:
This is a vin de garde, meaning that, under proper conditions, it may be kept between 5 and 7 years.
