Region:
In the Vaucluse Department, at the foot of the limestone Mont Ventoux. It grows in stony clayey-limestone soils.
History:
The Winery, lying near an oratory dedicated to Saint Marc, has borne this name since it was created. According to legend, Saint Marc, the patron saint of winemakers in Provence, passed through Caromb on an evangelisation journey.
Grape varieties:·
- Grenache (60%)
- Syrah (30%)
- Carignan (10%)
Vinification:
The Saint Marc vintage comes from a rigorous selection of grape varieties and grape quality (in terms of maturation and sanitary condition). It benefits from a traditional vinification process, with a long vatting period of approximately 20 days.
Tasting:
- Visual aspect: deep red colour.
- Olfactory aspect: relatively complex, with hints of fruit (sloe) and roasted aromas. ·
- Gustatory aspect: powerful, full, well bound, fresh with fruity and spicy flavours.
Accompanying foods and wines:
The Saint Marc vintage is well suited to red meat, game and cheese.
Serving temperature:
This wine should be served at a temperature of between 18 and 20°C.Storage:The Saint Marc vintage is a wine which, under proper conditions, may be kept for 5 to 10 years.
