Terroir:
In the Vaucluse Department, at the foot of the limestone Mont Ventoux and the Monts de Vaucluse.
History:
The Winery, lying near an oratory dedicated to Saint Marc, has borne this name since it was created. According to legend, Saint Marc, the patron saint of winemakers in Provence, passed through Caromb on an evangelisation journey.
Grape varieties:·
- Grenache Blanc (40%)
- Clairette (20%)
- Ugni - Blanc (30%)
- Bourboulenc (10%)
Vinification:
The white wine from the Saint Marc Winery is a blanc de blanc, meaning that it is produced from white grapes. After pellicular maceration lasting 24 hours, the grapes are pressed. The juice obtained is fermented at a controlled temperature of between 14 and 16°C to obtain a fruity and very aromatic wine.
Tasting:
- Visual aspect: pale gold colour with green hues, limpid and very bright.
- Olfactory aspect: very fine, powerful and complex nose, dominated by floral and fruity hints, with a touch of amyl.
- Gustatory aspect: a balanced, smooth and fresh body, aromatically very expressive, with a good length and finishing with dry white fruits.
Accompanying foods and wines:
This white wine is ideally suited for fish in sauce dishes and may also be enjoyed as a delicious aperitif.
Serving temperature:
This wine should be served at a temperature of between 8 and 10°C, ideal for white wines.
Storage:This white wine should be drunk within the year.
